Every weekend, Roxy’s Waffles dedicates itself to local events. Roxy’s Waffles has created a significant local following, from quiet private events to large food festivals. Junior Miranda Stafne has transformed her business into something more than a food truck—a place where the community can interact and come together.
Stafne always dreamt of owning a restaurant. After a few years, Stafne’s dream was finally a reality when her stepdad found a 1960s camper trailer for sale on Facebook Marketplace.
“When I was really little I wanted to start like a family restaurant,” Stafne said.
The process of making the waffle truck was no easy task for Stafne. She ran into difficulties with plumbing and other technical problems. Even though the process was challenging, she managed to finish the truck in time for her first event.
“There were a lot of setbacks in there, like plumbing,” Stafne said.
Even though the process of renovating the waffle truck was difficult, it has had a significant impact on the community’s growth. People have visited Stillwater just to try one of Stafne’s signature waffles.
“There have been people who come from far away to come see our truck, which I think is super cool,” Stafne said.
Stafne has shown her passion for her food truck through her effort to treat herself equally to her employees. Junior Zita Meyer is one of the employees at Roxy’s Waffles and has always felt welcome and encouraged to have fun.
Not only does Stafne equalize herself with her employees, but she also creates a hospitable environment to get to know her staff. The workplace is operated to achieve a closeness with the customers, but also the employees.
“Working in such a small space you absolutely get super close with your coworkers. Sometimes you may not have a rush and we just hang out and talk,” junior Natalie Gruba said.
Even with a joyous atmosphere and tasty waffles, struggles do occur. Stafnes first big event was homecoming and the struggle occurred early afternoon, and she had to persevere before introducing Roxy’s Waffles to the community.
“Our generators have been a struggle. Our generator broke down right away, so we had to figure out that,” Stafne said.
Perseverance has demonstrated itself as a trait of Stafne. She has also shown dedication to providing customers with visually appealing food.
“One thing I think people love about Roxy’s Waffles is our food we ensure that all of our items are presentable and Instagramable and also delicious,” Gruba said.
Stafne is setting new goals for Roxy’s Waffles beyond the Stillwater area community. In the coming years, she strives to bring the beloved waffles to the Minnesota State Fair.
“When we started it, I wanted to make it to the State Fair, so we’ll see if that happens,” Stafne said.
